Summary

THE ANNUAL PRODUCTION OF APPLES IN JAPAN HAS BEEN 800,000 TO 1,000,000 TONS AND THESE AMOUNTS HAVE NOT CHANGED FOR 20 YEARS. BUT THE LEADING CULTIVARS HAVE CHANGED ABRUPTLY ; SOUR CULTIVARS SUCH AS RALL'S JANETTE, JONATHAN AND MCINTOSH HAVE BEEN REPLACED BY RATHER SWEET CULTIVARS SUCH AS FUJI, STARKING DELICIOUS AND TSUGARU. APPROXIMATELY 75% OF THE ANNUAL PRODUCTION IN 1982 WERE THESE THREE CULTIVARS. ACIDITY OF THESE THREE CULTIVARS IS LESS THAN 0.5%, WHEREAS THAT OF THOSE OLD CULTIVARS EXCEEDED 0.5%. APPLES GROWN UNDER WARMER CLIMATIC CONDITION TEND TO BE LOWER IN ACIDITY AND THEY ARE SOFTER.
