Freezing of some selected vegetable varieties.

Summary

The paper considers the influence of the variety and freezing conditions on the quality of frozen vegetables. Studies were performed on 3 harvests from 3 different years. The experiments used 10 selected varieties of green peas, 9 of snap bean and 17 of sweet peppers (green, orange and red). Guidelines were developed for the varieties that were most suitable for preservation by freezing as well as for the appropriate process parameters.
