Summary

IN THE STUDY, THE FREEZING TIME AND RATE OF 1 CM3 CAULIFLOWER FLORET SAMPLES WERE DETERMINED UNDER DIFFERENT FREEZING CONDITIONS IN AN AIR BLAST FREEZER. FOUR DIFFERENT AIR TEMPERATURES: 253, 248, 243 AND 238 K (-20, -25, -30 AND -35 DEG C) AND SIX DIFFERENT AIR VELOCITIES (70, 131, 189, 244, 280 AND 293 M/MIN) WERE APPLIED. THE FREEZING TIME OF CAULIFLOWER SAMPLES FROZEN WITH AIR AT 253 K AND 280 M/MIN WAS SIMILAR TO THAT OF SAMPLES FROZEN AT 238 K AND 70 M/MIN. WHEN THE VELOCITY OF AIR WAS INCREASED FROM 70 M/MIN TO 293 M/MIN, THE FREEZING TIME WAS APPROXIMATELY HALVED.
