Summary

THE PROCESSING, DISTRIBUTION AND DISPLAY CONDITIONS OF SUCH FOODS ARE DEFICIENT. DEFECTS AT THE DISPLAY STAGE: TEMPERATURE TOO HIGH MORE THAN 261 K (-12 DEG C), OVERLOAD OF REFRIGERATING DISPLAY CASES, USE OF ISLAND DISPLAY CASES FOR FRESH FOOD FREEZING, DEFICIENT WRAPPING, NON-ENFORCEMENT OF REGULATIONS: NON-OBSERVANCE OF THE STANDARDS AVAILABLE ABOUT TRANSPORT CONDITIONS. DEFECTS AT THE PROCESSING STAGE: NO HYGIENE CHECKING ; HETEROGENEITY IN THE QUALITY OF A GIVEN PRODUCT ; NO COOLING OF PROCESSING ROOMS (MEAT, PASTE). HOWEVER THE SITUATION OF ICE CREAM AND SHERBET PROCESSING AND OF FRUIT AND VEGETABLES FREEZING AND PACKAGING IS ALMOST SATISFACTORY. THE FISH SECTOR IS THE MOST SERIOUSLY DEFICIENT. J.G.
