Summary

SPECIFIC HANDLING AND PROCESSING TECHNIQUES HAVE BEEN DEVELOPED TO PRODUCE QUALITY PRODUCTS FROM SQUID. A RATHER FRAGILE RAW MATERIAL, SQUID IS MOSTLY USED BY THE INDUSTRY IN FROZEN FORM. FREEZING AT SEA AND COLD STORAGE OF THE RAW MATERIAL IS, THEREFORE, A MUST IN ITS UTILISATION. HANDLING METHODS, HOLDING TIME AND TEMPERATURE PRIOR TO FREEZING ARE IMPORTANT CONSIDERATIONS IN THIS RESPECT.
