Summary
Analysis of variations in furaneol, mesifurane and furaneol glucoside contents during ripening of four varieties of strawberries. At the stage of market ripeness, significant variations were observed between varieties. The behaviour of the three compounds was observed in conditions simulating chilled transport and retail sale of strawberries.
