Summary

There are various challenges involved in reducing losses of fruit and vegetables in the world, in extending storage periods and in selling the product on more distant markets. A lot of pre and post harvest parameters on the way from the tree to the consumer are important. New genetically-manipulated, long-life varieties and new suitable criteria to determine the optimum harvesting time are available. The combination of the storage parameters maturity, temperature, relative humidity, CO2, O2, ethylene can be optimized, not only during storage but also during transport, in trade and retailing. New storage methods as controlled atmosphere and modified atmosphere packaging are not a substitute of refrigeration but a even more and more important supplement.
