The influence of the storage conditions on some quality parameters of Jonagold apples.

Summary

Jonagold apple fruits were harvested at the optimum stage of maturity for long-term storage and stored at 5 deg C and 95% relative humidity in air or in controlled atmospheres with O2/CO2 combinations of 17/4, 1/1 or 0.7/0.7%, respectively. The results over 9 months showed that the lower the O2 concentration the slower the decrease in firmness and titratable acidity and the slower the change of skin colour. No alcohol flavour or physiological disorders developed in fruits stored at 0.7% O2 and this concentration is recommended for storage of Jonagold fruits.
