Summary

The growth of L. monocytogenes was analysed for two different substrates: sterilized maize and pasteurized minced meat. L. monocytogenes grow very well on sterilized maize and in minced meat at temperatures between 20 and 22 °C but at 4 °C the growth rate is much slower. An infection caused by Listeria monocytogenes following consumption of sterilized cross contaminated maize is therefore possible.
