Growth of Listeria on packaged and non-packaged poultry carcasses at 24 and 48 hours refrigerated storage.

Summary

Out of 59 samples, 29 were introduced into polyethylene plastic bags, and 30 were not packaged. All carcasses were maintained under refrigeration conditions (0-2 °C). Samples were taken at 0, 24 and 48 h. For Listeria enumeration, 25 grams of the carcasses' skin were taken, and the most probable method was used. There is a decrease of Listeria count from poultry carcasses' skin after 24 hours under refrigeration. However, a new increase of counts was observed after 48 hours. Differences were not observed between the packaged or non-packaged poultry carcasses.
