Summary

Study in a model system of the effects of atmosphere composition on growth of Aeromonas hydrophila, Yersinia enterocolitica, Listeria monocytogenes and a cryotolerant strain of Bacillus cereus. The microorganisms were incubated on an agar-agar surface at 8 deg C. This model system can be applied to minimally processed products or to products packaged in modified atmosphere. Extrapolating the results to packaged fruit and vegetables shows that pathogen growth can occur at 8 deg C.
