Summary
Development of two mathematical equations for the prediction of Listeria growth either at sub-optimal temperatures, water activities and pH, or for the complete range of pH. The first equation is valid for pH values from 4.6 to 6.7, temperatures from 5 to 35 deg C and water activities from 0.95 to 0.997. The second equation is valid for pH values from 4.6 to 7.4 and the same temperature and water activity ranges.
