Summary

This guide deals with air treatment in professional kitchens. Ventilation is required, not only because of heat and pollutant emissions, but also for comfort, hygiene and fire-protection reasons. In the 1st chapter, the different types of kitchens are described and their functions indicated, together with the types of pollutants released. In the 2nd chapter, the criteria for comfort, hygiene, fire-protection, sound-level and energy-savings are studied. In the 3rd chapter, the air-treatment equipment is examined (equipment for capture, ventilation, air filtration and diffusion). In the 4th chapter, the ventilation systems and their principle are studied. Finally, the 5th chapter concerns design and installation.
