Summary

Some of the factors acting on brown core are: stage of harvesting, hardness of fruit, delayed cold storage, geographic localization. In favorable conditions: 10 days of ripening after the harvest, storage for 3 to 4 months and final ripening at 18°C for a few days, quality fruits are obtained and there is little chance of brown core occurring.
