Summary

BASING ON THE PRINCIPLE THAT GAS VELOCITY BETWEEN PARTICLES IS CONSTANT AND EQUAL TO SUPERFICIAL VELOCITY, THE AUTHOR SHOWS THAT THE GOVERNING FACTOR IN HEAT EXCHANGE IS PARTICLE DIAMETER OR, MORE GENERALLY, ARCHIMEDES NUMBER. FROM HIS EXPERIMENTS, HE DRAWS HEAT TRANSFER RELATIONSHIPS. THE EXCHANGE COEFFICIENT DURING THE FREEZING OF FOODSTUFFS APPEARS TO BE CONSTANT WITHIN A WIDE RANGE OF DIAMETERS OF 8 TO 46 MM.
