Summary

Histological changes in carrots frozen using a high pressure pilot unit for food processing were examined by light microscope. Raw carrot damage was studied in different treatments involving very high pressures (from 50 megapascals to 400 megapascals) and various temperatures (from -10 to -28 deg C). The results are given and discussed.
