Summary
The inactiviation of S. cerevisiae by a treatment at between 120 and 300 megapascal, at temperatures between -20 and 50 deg C has reactive kinetics of an order of about 1. A treatment at 190 megapascals at -20 deg C is equivalent to a treatment at 320 megapascals at ambient temperature. Applications for optimizing the sterilization of food products with no effect on taste are described. The effects of glucides and salts on inactivation of yeasts are also considered.
