Summary

Fish and fish products deteriorate rapidly; a reliable cold chain is therefore necessary in order to maintain quality and extend shelf life. For years, regulations have been designed so that temperature could be regulated starting with production, through the distribution networks right to the retailing of iced fish. However, whenever a consumer buys fish, requirements are jeopardized. Based on studies performed in a few European countries, the authors analyse the conditions under which consumers handle iced fish, domestic refrigerator temperatures and the impacts on the consumers' health.
