Summary
In order to get the quality of frozen fillet from Tilapia nilotica to be equal to that of non-frozen fresh fish, one must: freeze the fillets within 3 hours during the pre-rigor period; freeze them at -45 deg C in blast air; store them film packaged at -25 deg C for 2 weeks, and at -40 deg C for 40 days; and thaw them within 3 hours at 5 deg C in a refrigerator.
