Summary

This book comprises 9 studies presented at the 3rd Study Day held at the Centre for Historical Research on Mediterranean Societies (Centre de Recherches Historiques sur les Sociétés Méditerranéennes) held on November 22, 1997, in Perpignan, France. Archives and archeological prospecting have made it possible to identify 90 ice-making plants in the Roussillon area; these plants date from the end of the XVIth century up until recent times. They are described and analyzed and data on climatic trends, techniques used and economic and social history provide a valuable backdrop.
