Summary
Harvested broccoli cv. Generation spears were precooled to 0 deg C within 2 hours of harvesting and stored in polystyrene boxes with ice or with an ice replacement agent, or in waxed fibreboard boxes lined with polyethylene. It was concluded that as long as precooling and refrigerated storage are carried out, the use of ice or ice replacements for storing broccoli is an unnecessary expense.
