TESTS ON STORAGE IN ICE WERE CARRIED OUT ON TWO SPECIES OF VANUATU FISH: PRISTIPOMOIDES MULTIDENS AND ETELIS CARBUNCULUS, DEEP WATER LUTJANIDAE. AFTER 35 DAYS, A TASTE PANEL FOUND PRISTIPOMOIDES MULTIDENS ACCEPTABLE AND, AFTER 4 WEEKS, ETELIS CARBUNCULUS STILLACCEPTABLE. AFTER THESE TIMES, THE BACTERIAL LEVELS ON THE SKIN AND IN THE FLESH AND THE TOTAL VOLATILE CONTENT REACHED VALUES GENERALLY UNACCEPTABLE. THIS UNUSUAL STORAGE LIFE WILL FACILITATE THE EXPLOITATION OF THESE SPECIES.
