SHELF LIFE OF CHILLED ORANGE ROUGHY. RESEARCH STRATEGY FOR A NEW FISHERY.

Summary

A TEST ON STORAGE IN ICE SHOWED THAT THE FLAVOUR OF COOKED FISH FLESH IS THE MOST SIGNIFICANT CRITERION. SHELF LIFE IS THE PERIOD AFTER WHICHAN OFF-FLAVOUR AND AN OFF-ODOUR OF STEAMED MEAT ARE OBSERVED, IE 11-12 DAYS IN THE CASE OF HOPLOSTETHUS ATLANTICUS STORED IN ICE. A SERIES OF TESTS WERE CARRIED OUT IN ORDER TO STUDY THE CHANGES IN SHELF LIFE UNDER VARIOUS CONDITIONS. TRAWL-DAMAGED WHOLE FISH HAD A SHELF LIFE OF 9-10 DAYS. POOR INITIAL CHILLING RESULTED IN A LOSS OF SHELF LIFE OF 6 DAY STORAGE IN ICE. HEADING AND GUTTING RESULTED IN AN EXTENSION OF SHELF LIFE IN ICE OF 2-3 DAYS. FRESH FILLETS HAD A SHELF LIFE OF 5-7 DAYS AT 273 K (0 DEG C). THE QUALITY OF WHOLE FISH HAD LITTLE EFFECT ON THE SHELF LIFE OF FILLETS. DOUBLE FREEZING/THAWING RESULTED IN THE LOSS OF 2 TO 3 DAYS AS COMPARED TO SINGLE FREEZING.
