Summary

The author reports on several Australian studies aimed at developing preservation systems based on modified atmosphere packaging that would meet the demands of the consumers for convenience and fresh-like quality, while also giving sufficient shelf life to food for distribution. Similar preservation systems based on hurdle technology could be developed for extending the shelf life of other minimally processed vegetables and fruits.
