THE AUTHOR REVIEWS SEVERAL METHODS AIMED AT IMPROVING THE PERFORMANCE OF FREEZING TUNNELS FOR MEAT PACKED IN CARTONS. THE PERFORMANCE OF 3 FREEZERS, OPERATING UNDER DIFFERENT CONDITIONS, IS COMPUTER-SIMULATED. THE DAILY CYCLE IS VERY DIFFICULT TO ACHIEVE WITHIN 1 DAY, AND EVEN THE 2-DAY CYCLE CAN BE INSUFFICIENT, FREEZING BEING NON-UNIFORM. THE MOST EFFICIENT AND LEAST EXPENSIVE METHODS ARE AS FOLLOWS: UTILIZATION OF MESH SHELVES, CONTINUOUS CIRCULATION OF PRODUCT, MICROWAVE DETECTION AND REMOVAL OF NON-FROZEN PRODUCTS.
