Summary

Five native Australian herbs were used as antibacterials. They were found to exert antibacterial activity against Enterococcus faecalis, Escherichia coli, Listeria monocytogenes, Pseudomonas aeruginosa, Salmonella enteridis, Salmonella typhimurium and Staphylococcus aureus. The results demonstrate that these herbs have potential for use in foods in order to extend shelf life and promote safety. [Reprinted with permission from Elsevier. Copyright, 2005].
