Incidence and sources of Listeria monocytogenes in cold-smoked fishery products and processing plants.

Summary

The study identified the external surfaces of frozen and fresh fish as the primary source of L. monocytogenes in cold-smoked fish processing plants. During the different stages of processing, the bacterium is transferred to the exposed flesh, and the equipment, personnel, and other surfaces become contaminated. The flesh is not contaminated during the thawing of frozen fish.
