Summary

The authors examine factors affecting the agro-food market in France, under present adverse economic conditions. They comment on the growing requirements of the market: intense pressure on prices, hence on costs, increased sensitivity to hygiene risks resulting in a performance race by manufacturers, productivity, flexibility and reactivity, savings in material, manpower and energy. These trends result in rapid in technological changes and working methods. Some specific examples are given. J.R.
