Remarks on the development of "clean" procedures in conventional industrial processes, as a result of the pressure of increasing demand and automation (chemistry, packaging, textile, etc.). For the food industry, the targets of the study program "UNIR" (ultraclean, nutrition, industry, research) are mentioned; it was created in France by a few food industries (curing, catering, beverage, cooked meat, poultry, milk, cheese, pastry) to promote all possible improvements related to hygiene, under the aegis of the state departments and laboratories concerned (general principles, specific application techniques, measuring and controlling methods, cleaning).
