A BACTERIAL LYOPHILISATE PREPARED WITH AN IMPROVED MULTIPLICATION AND DESICCATION PROCESS WAS STUDIED IN SEVEN WINES. GENERALLY, THE BIOLOGICAL BREAKDOWN OF ACIDS WAS MORE RAPID IN VARIANTS WITH ADDED BACTERIA. IN THREE NON-INOCULATED WINES, NO BREAKDOWN OCCURRED WITHIN THE TIME OF THE EXPERIMENT. (Bull.
