Industrial freezers for food utilizing CO2. 1. Development and testing of a CO2 plate freezer.

Author(s) : LUND T.

Summary

During 2005 and 2006, Danish Technological Institute co-operated with several European partners on the EU COMPFREEZE project with the subtitle "Improving the competitiveness of the European frozen food industry through the development of new freezing equipment based on CO2". The partners included food producing companies, equipment manufacturers and refrigeration system contractors. The objective was to investigate the influence of the freezing process on the food quality. As the freezing process is a function of the equipment used, the best possible food quality was sought through changes in the freezing equipment. See also this Bulletin, reference 2007-2186.
