Summary

Residuary raw materials of Baltic herrings were stored at -25 deg C with chemical additives such as: skwalen, skwalen with citric acid, sodium nitrate, sodium nitrate with citric acid, acetylsalicylic acid. The effect of the additives in preventing hydrolysis and oxidation processes, and carotenoid changes was examined, along with the influence of the applied preservatives on the lipid extractivity in terms of frozen storage time.
