Summary
The development of this pathogenic bacterium was studied in a culture medium and in milk at 5.5 to 12 deg C. Growth curves and the duration of rest and generation phases were determined as a function of the temperature and the nature of the substrate. The experimental results revealed the influence of the substrate composition on the minimum growth temperature of E. coli verotoxigen, including E. coli O157:H7.
