Influence of two methods for precooling the Tommy Atkins mango during storage.

Summary
Precooling with water at 2 deg C is more efficient than with air at the same temperature, for the cooling time is shorter, and there is no weight loss. Precooling is not advisable if the cold chain is not maintained, because the storage life is the same as that for the non refrigerated product. Finally, precooling and storage at an adequate temperature are favourable, because they lengthen the storage life, reduce the weight loss and do not affect the development of the chemical characteristics of the fruit.
