Summary

The killer yeast KYT-1 was isolated from salted cucumber and identified as Debaryomyces hansenii. The killer toxin produced by this strain remains active at temperatures below 15 deg C and at pH 3.0-5.5. To inhibit the growth of film-forming yeasts, D. hansenii IFO 0855 and D. hansenii S1 were suspended in a seasoning solution used for the preparation of pickled vegetables.
