Summary

Influence of lactic-acid concentration (0.1-1.1 %), of pH (3.9-5.8) and of atmospheric composition on the survival kinetics and growth of Y. enterocolitica. Application to the study of these parameters of a model derived from the Whiting and Cygnarowicz-Provost model. The influences of lactic acid is greater in anaerobic media than in aerobic media. The interactions between variables have no effect on the loss of virulent plasmides.
