Listeria monocytogenes isolated from ice-creams and cakes.

Summary

In the course of the examination of 777 ice-creams, cakes, raw refrigerated or deep-frozen-powdered and pasteurized ingredients, environmental hygienic samples and swabs taken from workers, the following ones proved to be positive: 13 ice-cream samples, 11 cakes produced with whipped cream, 4 whipped cream, 10 swabs, taken after disinfecting and cleaning from equipments and cans for cream, 1 hand after washing, 1 faecal sample. Ingredients: dairy products, ice-cream powder, margarine, fresh and frozen fruits proved to be Listeria negative. The Public Health Service prescribed disinfecting cleaning, using more refrigerators, cooling vehicles and for workers obliged to undertake hygienic and refrigerating courses.
