Summary
THE POSSIBILITY OF EXTENDING THE STORAGE LIFE OF CONDENSED SWEETENED MILK BY USING THE PERMAFROST IN THE EXTREME NORTH REGIONS OF USSR AS A SOURCE OF NATURAL COLD WAS STUDIED. THE RESULTS SHOWED THAT AFTER A 6-YR STORAGE AT -10 DEG C WITH DIURNAL FLUCTUATIONS OF NOT MORE THAN + OR -0.1 K THE PRODUCT QUALITY REMAINED ALMOST UNCHANGED WITH THE COLOUR BEING WHITE WITH CREAMY SHADE, AND THE PRODUCT SHOWING NO SIGNS OF MELANOIDIN FORMATION. THE POSSIBILITY OF STORING CONDENSED SWEETENED MILK FOR MANY YEARS IS POINTED OUT.
