YOGHURT MADE FROM PASTEURIZED CONCENTRATED MILK WITH 4% FAT, AND CONTAINING SUGAR AND FRUIT WAS PACKAGED IN POLYSTYRENE CUPS, FROZEN TO -18 DEG C CORE TEMPERATURE AND STORED FOR 6 MONTHS. AFTER SLOW THAWING (AT 4 DEG C FOR 12 H) THE PRODUCT HAD A SATISFACTORY TEXTURE AND VISCOSITY AND THE STARTER FLORA REMAINED RELATIVELY HIGH DURING THE WHOLE STORAGE PERIOD.
