Summary

The effects of holding carrots (cv. Cello King) at 1 deg C for 1, 4 or 14 days prior to being placed under simulated shelf conditions (13 deg C, lower than 95%) on weight loss were investigated. Sections of roots were taken from carrots that had 4 days of preconditioning and carrots with no preconditioning. Preconditioned carrots at 1 deg C for 4 or 14 days showed significantly less weight loss and maintained a brighter orange appearance. Preconditioning enhanced deposition of suberin on the surface of the periderm and lignification of subsurface cell layers.
