Summary

Producing ready-to-eat fruits calls for a special process: maturation entails accompanying the ripening process that begins while the fruit is still on the tree, under clearly defined conditions. These conditions are investigated for different varieties of pears and for kiwi: duration, temperature, effects of storage conditions on ripened fruit quality, special precautions to be implemented with a view to marketing.
