RESULTS OF 2,277 TEMPERATURE MEASUREMENTS MADE IN FRANCE DURING THE 1980 SUMMER IN PACKAGES OF FROZEN FOODS (GREEN BEANS, BLOCKS OF FISH FILLETS, POULTRY), LOCATED AT THE TOP, IN THE MIDDLE AND AT THE BOTTOM OF 759 RETAIL CABINETS. IN HYPERMARKETS, ONLY 20% OF PACKAGES AT THE TOP HAD A TEMPERATURE NOT EXCEEDING -18 deg C AGAINST 36.2% IN SUPERMARKETS AND SMALL SUPERMARKETS; IN THE FORMER, THE PACKAGES AT THE BOTTOM OF CABINETS WERE AT THIS TEMPERATURE IN 64.5% OF CASES, AGAINST 76.5% IN BOTH OTHERS. IN ISLAND DISPLAY CASES WITH FORCED CONVECTION, 34.3% OF PACKAGES AT THE TOP HAD A TEMPERATURE HIGHER THAN -12 deg C AND 62.6% A TEMPERATURE HIGHER THAN -15 deg C, SIMILAR OBSERVATIONS WERE MADE IN UPRIGHT CABINETS WITH FORCED CONVECTION.
