Summary
Investigations were conducted to provide more insight into the protein-decomposing enzymes of selected spoilage. No compelling correlations exist between actual end-product changes due to microbial protein decomposition on the one hand and actual germ counts on the other. In addition, it is safe to assume that enzymes' spectrum of activities extends beyond their spectrum of multiplication.
