Summary

Attention is drawn to the Codex Alimentarius and its classification of microbiological criteria is tabulated. Both technical and non technical influences in establishing valid criteria are discussed together with the selection of significant organisms. Sampling plans, their limitations and some solutions are considered, and the problems caused by Listeria monocytogenes are reviewed at length. Finally, factors affecting microbiological methods are debated, including the problem of disagreement amongst microbiologists as to the most suitable method. G.R.S.
