Summary

Within a survey on the microbiological quality and safety of prepackaged sliced raw hams of German origin, a total of 178 samples were collected from various local discounters and supermarkets and, after storage at 7 and 12°C, were subjected to sensory, physico-chemical and microbiological analyses.
