Summary

The objective of the work is to assist the food industry in improving the quality and safety of foods and to predict the behaviour of foods during thermal processing. The data and models generated by the collaborating teams are being embodied in computer software being developed for the prediction of food properties and behaviour. Areas of interest: collection of thermophysical property data and equations (from own measurements and from literature); collection of surface heat transfer coefficient data from literature and industrial measurements; measurement and modelling of food behaviour during thermal processing; software development; dissemination of results and liaison with the food industry.
