THE OPTIMIZATION OF FAST FREEZING METHODS FOR MEAT AND MEAT PRODUCTS IS GAINING MORE AND MORE ATTENTION, NOT ONLY BECAUSE OF PROGRESSING CERTIFICATION BY GOVERNMENTS, BUT ALSO TO PROMOTE EFFICIENCY AND QUALITY. THEIRREGULAR SUPPLY OF FOODS AND THE VARIETY OF PACKAGINGS MAKE IT DIFFICULT TO DESIGN A BETTER PRACTICAL FREEZING PROCESS. THE PAPER DEALS WITH THE CHANGING OF THE FREEZING PROCESS OF MEAT USING SIMPLE MODIFICATIONS IN HANDLING ROUTINES.
