Modified atmosphere packaging of broccoli florets: effects of temperature and package types.
Author(s) : CABEZAS A., RICHARDSON D. G.
Summary
Broccoli florets washed with 200 ppm NaOCl were held at 0, 5, 10, and 15 °C in several sealed Cryovac films capable of producing modified atmospheres, and compared to controls in perforated polyethylene film bags. Cryovac PD941 was the most effective film among those tested, with MAP broccoli retaining excellent quality for at least 4 weeks at 0 °C.
