Summary

Mushrooms are placed in different containers covered with PVC film and stored at 3, 10 and 20 deg C. The effects of temperature, respiration rate, critical and optimum concentrations of oxygen and carbon dioxide are studied together with the relationship between the weight of the package and the permeability of the film. Modified atmosphere packaging is effective, except for those mushrooms, which respire at a greater rate or which are exposed to excessive temperature changes.
