FUJI APPLES WERE SEAL-PACKAGED IN POLYETHYLENE (PE) FILM WITH THICKNESS OF 0.02, 0.03, 0.04 OR 0.06 MM AND STORED FOR 5 MONTHS AT 273 TO 280 K (0 TO 7 DEG C). THE ATMOSPHERES IN THE BAGS WERE MODIFIED TO 5.4-19.5% O2 WITH 0.8-4.5% CO2. THE STORAGE USING PE FILM REDUCED THE WEIGHT LOSS AND DECAY OCCURRENCE BUT DEVELOPED SLIGHTLY HIGHER INTERNAL BROWNING. THE CHANGES OF POLYGALACTURONASE AND CELLULASE ACTIVITIES WERE HIGHLY RELATED TO THE FIRMNESS DECREASE. THE SENSORY PANEL RATED THE FRUIT FROM THE 0.03 MM THICKNESS BAG HIGHEST IN ALL FACTORS TESTED. OXYGEN CONCENTRATION REDUCED TO CA 15.5% AND CO2 INCREASED TO 2.4% IN 0.03 MM PE FILM PACKAGES.
